We deliberately beat, not whisk, our ingredients together - carefully controlling the ratio to preserve flavour while prioritising texture.
A properly made marshmallow batter should need a helping hand into the tray - it should never pour in our kitchen.
And finally, there’s no imperfect hand-cutting or messy guitar cutter here. Our marshmallow sets inside the cutter itself and is only popped out once fully set, ensuring clean edges and perfectly even squares every time.
CREAMY, NOT SPONGEY
Once set for a minimum of 18 hours, our marshmallows are gently “popped” from the cutter and lightly dusted to limit sticking.
While texture can vary slightly depending on seasonal ingredients and flavours, we’re proud of our signature finish - a marshmallow that’s a little more dense, creamy, and indulgent than most.
